Literally means 'recooked' in Italian!  This cheese is a combination of sheep, goat & cow's milk, for an ultra creamy and slightly sweet flavour, which makes it perfect for both savoury and sweet dishes.  Ricotta loves the acidity of tomatoes and it's truly at home on a pizza!
